Still trying to beat down those mountans of ground beef in my fridge.

Macaroni and cheese

Italians really know how to cook.
For lunch today I brought "maccheroni con salsa dolce", which is really Italian macaroni and cheese. It is different from (read: better than) American macaroni and cheese for the following reasons:
It has chopped onions and garlic in it.
It has tomatoes in it.
It has ground meat in it.
It has ricotta cheese (white cheese is always better than yellow cheese!).
The honey balances the cheese and tomato to create a subtle taste contrast.
I recommend it highly to all reviewers.

Who would have thunk it...Tater Tots not good?
After a long morning at my university desk job, I made a rare visit to the student cafeteria for lunch today. Where else but in the midwest would you find something called Tater Tot casserole? Overwhelmed with hunger, in need of comfort food after a rough morning, and surrounded by 19-year-old college kids proclaiming Dude, its Tater Tot day!, my 38-year-old brain is tricked into thinking this could be a good thing.
I ordered and was presented with a glistening pile of ground beef and mushed up tater tots topped with unidentifiable yellow cheese. This would have been a good time to reconsider my choice but, no, I proceed to a table and shovel this mess into my mouth.
Its now one hour later and painfully obvious that I made the wrong choice.
A quick Google search actually brought up a photo of this abomination. Apparently, it's quite popular amongst the toddler set. Please take my advice. Now matter how hungry you are, or how bad your day, if you see this casserole, just walk away!

First try at a tuna salad in a long time. A whimsical ingredient made it extra special.
Tuna in water
Celery
Green onions
Black olives
Real mayonnaise

Lebanese Breeze Whipped Garlic !
